PEANUT BUTTER MUFFINS from WWII

This is a recipe from World War II when butter and sugar were hard to get because of rationing.  The peanut butter and honey supply the fat and sugar.

PEANUT BUTTER MUFFINS

2 cups sifted flour

2 teaspoons baking powder

1 teaspoon salt

1/2 cup peanut butter (either smooth or crunchy)

1/4 cup honey

1 egg

1 cup milk

1/2 cup raisins, chopped

Sift flour once, sift again with baking powder and salt.  Measure peanut better, cut into dry ingredients.  Beat egg slightly, add milk and stir into first mixture.  Add honey and chopped raisins, mixing well but being careful not to overbeat.  Place in oiled or lined muffin tins.  Bake in hot oven 400 degrees F for 15 minutes or until muffins are done.
