GERMAN APPLE CAKE

Another one of my mother’s recipes!

GERMAN APPLE CAKE

2 x-large eggs

1 cup vegetable oil

2 cups sugar

1/2 teaspoon salt

1 teaspoon vanilla

2 teaspoons cinnamon

1 teaspoon soda (dssolved in water)

2 cups flour

1 cup nuts

4 cups peeled, thin sliced apples

Beat eggs and oil until foamy.  Add the remaining ingredients, putting apples and nuts in last.  Batter will be very thick.  Place in a 9 x 13 pan and bake at 350 degrees F for 45 to 60 minutes.

ICING:
1 – 3 oz pkg cream cheese

2 tablespoons butter

1 teaspoon vanilla

2 cups powdered sugar

Mix cream cheese with butter, vanilla and powdered sugar and ice cake when cool.
