One of my mother’s older sisters was Minnie Flo Shank Greninger.  She was born in 1912 and moved to California when her other siblings came west.  She met and married Daniel Greninger and they settled in San Leandro, California with their three sons.  Minnie was a great cook and she also worked in catering at the Holiday Inn after the boys were older.  She made tiny sandwiches out of a single loaf of sourdough bread, and then put them back together like a puzzle.  She also made this jello salad which we all loved.  As I’ve stated before, Jello is not really my thing, but there are three or four of these salads that I really like and the recipe for this one follows.


Dissolve 2 small packages of strawberry or raspberry Jello in 2 cups of boiling water.  Add 2 small cartons of frozen berries, either strawberries or raspberries, or one of each.  Add two well mashed, ripe bananas, and one small can of crushed pineapple.  Pour half the mixture into a 9 x 13 pan and put in refrigerator.  When set, spread sour cream over the top, then pour rest of Jello mixture on top.  It will be syrupy until set.  The tanginess of the sour cream offsets the sweetness of the fruit and Jello.
