NO BAKE APRICOT/COCONUT FRUIT BALLS – Gluten Free

These are really easy to make, and the longer you keep them in the refrigerator, the better they get. The most time consuming part is chopping the dried apricots (or peaches). Interestingly enough, most people cannot identify the apricots and think that this is some sort of cheesecake concoction. My mother got this recipe from a friend back in the 80’s and as was typical at the time, she wrote it on the back of a used envelope!

NO BAKE APRICOT/COCONUT FRUIT BALLS – Gluten Free

8 oz dried apricots or dried peaches, chopped fine.
2-1/2 cups flaked coconut
3/4 cup sweet condensed Eagle Brand milk
2/3 cup finely chopped pecans

Mix first three ingedients together thoroughly. Then roll into one inch balls. Roll each ball in chopped pecans. Let stand two hours at room temperature, then refrigerate in an air tight container.

NOTES:

I got tired of rolling the balls in pecans about half way through and just mixed the pecans into the mixture and then rolled into balls.  Also, as time marched on, the mixture got warm and harder to roll, so I had to put it in the freezer for a few minutes and then proceed.
