This is a recipe that I got from my cousin, Eleanor McGrew Brumm.  It’s simple and makes a great side dish or a vegetarian, gluten free dish.


1/2 cup chopped onion

1/4 medium green bell pepper, chopped

1/4 cup butter

1 cup regular rice

1 can beef broth or consume

1 can water

1 tablespoon Worcestershire Sauce

1 small can mushrooms

Melt butter and brown onions and green pepper.  Pour in rice and let simmer a couple of minutes.  Add consume, water, mushrooms and Worcestershire Sauce.  Let simmer for five minutes.  Then put into a casserole dish in a 350 degrees F oven for one hour, covered with lid or foil.  Stir at 30 minutes and then continue baking until done (another 30 minutes).
