NO BAKE COCOA COOKIES – Gluten Free

My cousin, Eleanor McGrew Brumm, sent me this recipe.  She got it from her mother (my aunt), Laura Shank McGrew.  The recipe calls for oats, but it’s possible to get gluten free oats, and I have also made these bars with gluten free Chex (crushed) or Rice Krispies.

NO BAKE COCOA COOKIES

Combine 2 cups sugar, 1/2 cup milk, 1/2 cup cocoa, 1/2 cup butter, dash of salt and 1 teaspoon vanilla in a medium saucepan.  Boil mixture for 90 seconds, then remove from heat and andd 1/2 cup peanut butter and 3 cups of quick cooking oats or other cereal.  Stir till thick and then pour into a greased 13 x 9 x 2 pan.  Let cool and cut into squares.
