CHERRY COCONUT BARS

Here is another family favorite which we made during the holidays.

CHERRY COCONUT BARS

Pastry:

1 cup sifted flour

1/2 cup butter

3 tablespoons powdered sugar

Filling:

2 eggs slightly beaten

1 cup sugar

1/4 cup flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon vanilla

3/4 cup chopped nuts

1/2 cup coconut

1/2 cup quartered maraschino cherries.

Heat oven to 350 degrees F.  With hands, mix flour, butter and powdered sugar till smooth.  Spread thin layer with fingers in an 8- inch square pan.  Bake 25 minutes.

Stir rest of ingredients into eggs.  Spread over top of baked pastry (no need to cool).  Bake 25 minute longer.  Cool, cut into bars.
