Another Irish Apple Cake

This recipe came from the Irish publication of Food & Wine magazine and it’s a little different from most becuase the apples are paired with the flavoring of orange.  Another recipe that will need a metric conversion chart or a scale that does both grams and ounces.


175 grams butter

175 grams sugar

zest of one orange, grated

3 eggs

250 grams self-rising flour

1/2 teaspoon baking powder

500 grams apples, peeled, cored and sliced

50 grams flaked almonds

1/2 teaspoon ground cinnamon

Cream the butter with sugar until light and fluffy.  Add the orange zest and gradually beat in the eggs.  Sift the flour and baking powder and fold into the butter mixture.  Pour half the mixture into a 25 cm cake tin.  Scatter over the apple slices along with the flaked almonds and cinnamon.  Top with the remaining batter.  Bake for an hour in a preheated oven, 200 degrees C/gas mark 6 (about 350 degrees F).

NOTE:  If you want to ice this cake, add the juice of the orange to 125 grams powdered sugar and smooth over the top.  Decorate with flaked almonds.
