I have posted a couple of recipes for lemon curd on the blog.  Once you have the curd made, here is an easy recipe for a lemon cake which is simple to make.


Bake your favorite white cake mix (or from scratch) in a 13 x 9 inch pan.  Cool cake in pan on a wire rack 20 minutes.  Pierce the top of cake every 1 to 1-1/2 inches, using the handle of a wooden spoon.  Spread 2 cups lemon curd over cake and let cool completely.  Cover and chill 4 hours.  Frost top of cake with sweetened whipped cream, cut into squares and serve.
