QUICK STUFFED PARMESAN POTATOES

Here is a simple and fast way to prepare potatoes, especially good with chicken or pork chops.

Scrub 4 medium russet potatoes and then pierce each one with a fork.  Place in a baking dish, cover with vented plastic wrap, then microwave on High for 17 minutes or until tender.  Cut each in half, scoop flesh into a bowl.  Cut slices off bottoms.  Mash flesh with 1/2 cup cream, 1/4 cup grated Parmesan cheese, 5 chopped basil leaves, 1/8 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper.  Spoon into potato halves and place in baking dish.  Top with 1/4 cup grated Parmesan and bake 15 minutes in 425 degrees F oven.  Serves 8.
