I always end up with left over ham after the holidays.  Over the years, I have done evrything from grinding it up for ham salad to chopping it up to add to scalopped potatoes, mac and cheese and split pea soup.  I recently came across this idea for using up the left overs and it makes a nice change.


1 refrigerated tube of buttermilk or other biscuits

2 cups fine chopped ham

2 cups shredded cheddar or other cheese (I sometimes use monterey jack)

Open the biscuits and cut each in half.  Place chopped ham and cheese on one half, then top with the other half of the biscuit and crimp around the edges to seal.  Bake until golden brown.  These are delicious warm or reheated in microwave.
