DECADENT CHOCOLATE PUDDING CAKE

I tried this cake recently and it turned out really well.  It does taste like both pudding and a brownie-like cake.  It has no eggs and very little butter!

DECADENT CHOCOLATE PUDDING CAKE

1 cup flour, sifted

2 teaspoons baking powder

1/4 teaspoon salt

3/4 cup sugar

6 tablespoons unsweetened cocoa powder, divided

1/2 cup milk

2 tablespoons melted butter

1 cup light brown sugar (packed)

1-1/2 cups very hot water

Preheat oven to 350 degrees F.  Sift together the flour, baking powder, salt, sugar and 2 tablespoons cocoa powder in a bowl.  Add the milk and melted butter and stir to combine.  Spread the batter in a 9 x 9 inch baking pan.  In a small bowl,  Add Mediamix together the brown sugar and remaining 4 tablespoons cocoa powder; sprinkle this evenly over the batter.  Carefully pour the hot water over the topping.  Bake for 40 to 45 minute.  The brownie-like cake will rise to the top , with the gooey pudding on the bottom.  Cut the cake into squares and spoon the pudding over the top of each piece.  Then serve warm plain or with ice cream or whipped cream and fresh berries.  Refrigerate leftovers.
