CHICKEN STUFFED WITH GOAT’s CHEESE and TARRAGON – Gluten Free

This is another test recipe that I prepared for the British cooking magazine, BBC GOOD FOOD.  I used Napa Valley Goat Cheese the first time.  I tried it a second time with ricotta cheese and pancetta instead of Parma Ham.  All good choices.

CHICKEN STUFFED WITH GOAT’s CHEESE and TARRAGON

4 chicken breasts of equal size

140 grams soft goat’s cheese  (5 to 6 oz)

zest of half a lemon

1/2 long red chili pepper, finely chopped

1 tablespoon finely chopped tarragon

8 slices Parma ham

salad and crusty bread to serve

Heat oven to 190 C (375 degrees F).  Beat together the goat’s cheese, lemon zest, chili pepper, tarragon and salt and  pepper to taste (doesn’t need a lot of salt though).  Cut a slit in the side of each chicken breast, then, using your fingers, make a pocket, making sure you don’t pierce through the other side.  Stuff the cheese mixture into the pockets, season the chicken breast with salt and pepper, then wrap 2 slices of ham around each breast, covering the pocket tightly.  Place on a baking tray, drizzle with olive oil and cook for 20 minutes until cooked through but still moist, and the juices run clear.

SERVING SUGGESTION:  Serve with a simple salad and new potatoes or crusty bread to mop up the juices.

    • My god child’s sister has Celiac Disease. Diagnosed in 1992, there weren’t a lot of choices back then. I don’t avoid gluten, but when I come across recipes that are gluten free, I save them for her.

      • No there were not! In fact, when my husband started going GF, it was about 4 years ago and in the first year there was very very little. Then all of a sudden it started exploding.

      • Yes, things really got much better about 2-1/2 years ago when gluten free became a fad diet. Although, some of the products have already come and gone.
