This recipe was originally meant for the oven, but I have also grilled the vegetables. Another recipe for summer weather which can be moved indoors to the oven when the weather cools down.
ROASTED OR GRILLED VEGETABLES
1 onion, cut in wedges
2 zucchini, sliced
2 yellow squash, sliced
1 red bell pepper, sliced
21 green bell pepper, slices
2 tablespoons olive oil
2 teaspoons dried Italian seasoning
salt and pepper (black and white)
1 lemon halved
Place vegetables in a bowl Add oil, seasoning, salt and pepper; mix well. Place vegetables in a single layer on a pan prepared with parchment paper if baking in oven, or outdoor grill pan if grilling. Sprinkle on additional seasonings, if desired. Place pan in oven on top rack at 400 degrees F, or on your grill in grill pan. If baking, bake 15 minutes or until vegetables are crisp-tender. Grill about the same length of time. Serve with lemon.
