LEMON SNAP COOKIES – From Dr. Price’s Cookbook – 1887

Returning to Dr. Price’s 1887 cookbook, here is a very basic recipe for Lemon Snap Cookies.  No measure on the flour again, just “flour enough to make very stiff.”  They obviously must have been cut out cookies.

LEMON SNAPS

One cup sugar, one half cup butter, two eggs, one teaspoonful extract of lemon, a quarter of a teaspoonful of soda dissolved in a teaspoonful of milk, flour enough to make very stiff, and roll very thin.
