I have been reorganizing my books, and in particular, cookbooks. It is not a small task and I am only about halfway through the process. My hope is that I can actually find what I am looking for…when I am looking for it! When I started this blog in 2012, I began putting up family recipes and all my tried and true recipes as I came across them. However, there were 3 in the tried and true category that I could never find. This week as I was flipping through my copy of JOY OF COOKING, out fell the three I had searched for. Here is the first one, which I got from a friend back in the early 80’s; it’s a cold soup which is best suited for summer, but now that I have found it, I am posting it right away!
SOUPE AU PARADIS (Serves 8)
5 pounds tomatoes, peeled. Blend and strain.
Add 1/3 cup lemon juice, 1/3 cup sugar, 2-1/2 teaspoons salt, and 1/4 cup safflower or canola oil, not olive oil. Mix well. Then mix in 1-1/2 cups of sour cream. Chill for at least 2 or 3 hours.
Garnish with melon balls (the best part!) and fresh mint.
