I came up with this recipe by combining two recipes. These meatballs are a bit hit in my family.
CARAMELIZED ONION AND CHICKEN MEATBALLS
1 pound ground chicken
1 egg, beaten
2 slices white bread, crumbled and soaked in two tablespoons of milk
1/2 cup Parmesan cheese
2 teaspoons Italian seasoning
1 medium onion, sliced thinly
2 teaspoons olive oil
salt and pepper to taste
First, saute the onion in the olive oil over medium/low heat until translucent. Then turn heat up to medium and cook until caramelized. They should be a nice brown color, but not burned. Drain and set aside.
Preheat oven to 400 degrees F and prepare a baking sheet with some cooking spray. Combine all ingredients in a mixing bowl and mix thoroughly until all ingredients are incorporated. Roll into 1-1/2 inch balls and place on the prepared sheet. Bake for about 20 to 25 minutes until fully cooked.
Serve with any sauce you like on top of your favorite pasta or individually with toothpicks.
