SAUSAGE APPLE FRITTATA

I had brunch with friends a week or two ago and this was the main dish served, in two variations, see below:

SAUSAGE APPLE FRITTATA

In a 9 inch ovenproof skillet (or round baking dish), heat one tablespoon olive oil.  Add 1/2 pound breakfast sausage links and cook over moderate heat until golden, about 5 minutes.  Dice in half inch pieces.  Stir in one dozen eggs beaten with 1/4 cup milk, one diced Granny Smith apple, one cup shredded sharp cheddar cheese and 1/2 cup chopped dill; season with salt and pepper.  Bake at 375 degrees F for 30 minutes, until set.

A second frittata was made with large chicken and apple sausages (about three since they are larger than breakfast links), also cut up, then the same ingredients except no dill.  Rosemary and thyme were used instead.
