I grow a few herbs in pots on my patio and this is a nice salad dressing using oregano.
FRESH OREGANO DRESSING
In a bowl, whisk together 3 tablespoons red wine vinegar, 1-1/2 teaspoons lemon juice, 1 teaspoon each minced shallot and honey, 1/2 teaspoon each kosher salt, fresh thyme leave (chopped) and minced garlic, and 1/4 teaspoon pepper. Also throw in about half a teaspoon of white pepper if you have it. Slowly whisk in 3 tablespoons extra virgin olive oil, then stir in 1-1/2 tablespoons fresh oregano leaves (chopped in small pieces). Let dressing sit at least ten minutes for flavors to blend. Mix one more time before using.
NOTE: For a completely savory dressing, omit the honey. I keep this in the refrigerator for up to a week.
