I’ve posted and reposted my Balleymaloe recipe for pickled cucumbers.  Here is a recipe for pickled green beans:


Pack 10 oz green beans in a heatproof one quart glass jar.  In a saucepan, bring 1 cup water, 1/2 cup tomato juice, 1/3 cup rice vinegar, 2 tablespoons each horseradish and salt, one teaspoon black peppercorns (whole), one teaspoon white pepper, and 2 crushed garlic cloves to a boil, pour over the beans and let cool completely.  Seal and refrigerate for at least 2 hours.



  1. can this recipe some how be canned (water bath) – how???

    • Don’t know…I never try canning method, only the quick method; but I think it would probably work.
