Here is an interesting recipe using green beans and scallions; at first I thought it must be exclusively a brunch dish, but because of all the vegetables, I could see serving this as a quick dinner.


In a bowl, whisk 3/4 cup plus 2 tablespoons cold club soda, 3/4 cup flour, 1 teaspoon baking powder and 1/2 teaspoon each salt and toasted sesame oil.  Heat 2 tablespoons canola oil in a 12 inch nonstick skillet.  Add 12 oz french cut green beans and 6 chopped scallions; stir fry over moderately high heat for 5 minutes.  Stir in one sliced hot read chile pepper (optional), top with batter.  Cook over moderate heat for 5 minutes, slide onto a plate and invert back  into the skillet, cook for 4 minutes more, until browned.  Serve with soy sauce.
