ASIAN POTATO SALAD WITH SHRIMP

Another potato dish:

ASIAN POTATO SALAD WITH SHRIMP

Place 2 pounds new potatoes in a large saucepan, add a dash of salt.  Cover with cold water and bring to boiling.  Reduce heat and simmer, uncovered about 25 minutes.  Drain. Cool completely.  Whisk together 1/4 cup Asian chili garlic sauce, 1/4 cup peanut oil, 3 tablespoons rice vinegar, 2 teaspoons fish sauce and 1/2 teaspoon kosher salt.  Gently smash potatoes; transfer to a bowl.  Add one pound cooked, peeled and deveined shrimp, 1/3 cup chopped peanuts, and dressing; toss to coat.  Chill at least 30 minutes.  Stir in 1/4 cup chopped mint.  Makes 6 servings.
