This is a good (simple) recipe to try for brunch:
HAM AND CORN QUICHE CUPS
Microwave one ear of sweet corn in its husk for 2 minutes. Cool slightly. Holding the cob’s silk end with a potholder, cut off the stem end. Strip husk and silk. Cut kernels from cob. Coat six 2-1/2 inch muffin cups with nonstick cooking spray. Line each with a thin slice of deli ham. Divide 1/3 cup chopped fresh spinach, 3 tablespoons shredded cheddar cheese and the corn among the cups. Beat 3 eggs and season with salt and pepper. Pour into cups. Bake at 350 degrees F for 15 to 18 minutes or until set. Cool in pan for 5 minutes before loosening edges with knife to serve.
