Honeycrisp apples are my new favorites:
APPLE CARAMEL SUNDAES
In a large skillet, cook 2 peeled and chopped Honeycrisp apples in 6 tablespoons unsalted butter over moderate heat until browned, about 5 minutes. Stir in 1/2 cup light brown sugar, 1/3 cup heavy cream, and 1/2 teaspoon salt. Cook until thickened, 3 minutes. Serve over ice cream, topped with whipped cream and some julienned apple slices.
