APPLE CRANBERRY CAKE

Time for cranberries!  This is easy, fast and tasty!

APPLE CRANBERRY CAKE

Arrange 1/2 inch thick slices of one baking apple in a parchment lined 9 inch cake pan.  Top with 1/2 cup light brown sugar and 1/2 cup cranberries.  Beat 2 eggs with 3/4 cup granulated sugar, 3/4 cup sour cream and 1 teaspoon vanilla.  Beat in 1-1/2 cups flour, one stick melted butter, 1 teaspoon baking powder and 1/2 teaspoon salt.  Spread in the pan.  Bake at 350 degrees F for 50 minutes.  Let the cake cool slightly, then invert onto a plate.
