I have been on a Mediterranean diet kick lately and this falls into that category; it’s quick to prepare and very tasty:
ZUCCHINI, RADISH and WHITE BEAN SALAD
2 small zucchini, thinly sliced (about 12-14 oz)
5 radishes thinly sliced
1/4 extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon kosher salt
1/2 teaspoon black pepper (I also use a little white pepper here)
1 – 15 oz can great Northern beans, drained and rinsed
1 bunch watercress (or radicchio), trimmed (about 8 oz)
Toss together the zucchini, radishes, oil, lemon juice, salt and pepper in a large bowl. Add the beans and watercress and toss to coat. Serve at room temperature.
NOTE: Any kind of greens can be used, and this recipe works well with any kind of creamy bean like butter beans or garbanzos, and all types of radishes. Mix and match!
