Here is another recipe that uses Sambal Oelek an Asian chile paste that can usually be found on the Asian foods aisle:


Cut one English cucumber in half lengthwise; cut each half crosswise into thirds.  Place pieces, cut side down, on a cutting board and smash with a heavy skillet or cooking mallet until slightly flattened and split in places.  Chop into one inch pieces.  Combine 1-1/2 teaspoons sambal oelek, one teaspoon toasted sesame oil, 1/4 teaspoon salt, and one grated garlic clove.  Toss with cucumber, 1/4 chopped green onions, and 1/4 cup chopped cilantro.  Let stand 15 minutes before serving.
