This recipe makes two loaves of bread that are very dense and moist. I like it because it uses whole wheat flour in place of regular flour.


2 cups whole wheat flour
1 cup all purpose flour
1-3/4 cups sugar
2 cups mashed very ripe bananas (about 4 medium)
1/2 cup coarsely chopped nuts
2/3 cup vegetable oil
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
4 eggs

Heat oven to 350 degrees F. Grease bottom only of two 9×5 loaf pans with cooking spray (I use paper liners). Beat all ingredients with electric mixer on low speed for 30 seconds. Beat on medium speed for 45 seconds, scraping bowl frequently. Pour batter into pans. Bake 55 to 65 minutes or until tester comes out clean. Cool ten minutes. Loosen sides of loaves from pans. Remove from pans to cooling rack and cool about 2 hours before slicing.

Makes 2 loaves (about 30 slices).

    • It’s really quite nice…makes for a slightly heavier bread.
