I am always looking for recipes where I can use up apples that are past their prime. This recipe calls for Granny Smith apples, but any type of apple will work.
APPLE CHEDDAR BREAD
3 cups original Bisquick mix
1/3 cup sugar
2 cups shredded extra sharp Cheddar cheese (8 oz)
1-1/2 cups finely chopped unpeeled Granny Smith apples
1/2 cup sour cream
1/2 cup milk
Heat oven to 350 degrees F and spray bottom only of a 9 x 5 inch loaf pan with cooking spray (or use paper liner). In medium bowl, stir together Bisquick, sugar, 1-1/2 cups cheese and the apple. In small bowl, beat sour cream, milk and eggs with whisk until blended. Add to apple mixture, stirring until blended. Pour into pan. Bake one hour, then sprinkle with remaining 1/2 cup cheese. Bake 5 minutes longer or until cheese is melted and toothpick inserted in ceneter comes out clean. Cool 10 minutes. Run knife around sides of pan to loosen loaf; remove from pan to cooling rack. Cool one hour.
Makes 12 slices.
