Wanita McReynolds Chicken & Rice Casserole – can be gluten free

A recipe from my sister-in-law’s mother.  My mother wrote the recipe on the back of another recipe card and the directions are sketchy.


2 pieces celery, sliced

1 green pepper, sliced

1 onion chopped

2 cups boned, cooked chicken pieces

2 packages Lipton dry chicken noodle soup mix

1 cup uncooked rice

6 cups broth (or part water)

Brown onion, add celery and green pepper.  Heat broth, add soup mix packets and put everything together in a casserole dish.  Bake uncovered at 350 degrees F for about one hour.

NOTE:  If you can get a chicken soup dry mix without wheat or simply season from scratch with chicken stock and herbs, then this recipe can be gluten free.


  1. I used to Absolutely love this!! Maybe it was because we never got to eat Chicken! LOL I am going to have to make it soon.


    • Yes, your dad (my oldest brother Larry) missed out on a lot of great food because he did not care for chicken or turkey!
