This is a recipe that I have made over the years without ever referring back to the original written recipe. That’s how simple it is! I love the way the rice takes on the flavor of the beans while cooking.
CUBAN RICE AND BEANS
Sautee one finely chopped onion in two tablespoons of oil until translucent. Add one cup white rice and one 14 oz can black beans with the liquid. Add one cup of water, 1-1/2 teaspoons cumin, 1/2 teaspoon of oregano, and half a teaspoon of red pepper flakes. Stir and cook the rice until light and fluffy.
