BREAKFAST-IN-A-MUFFIN

These are easy to make and nice to serve for brunch.  I sometimes substitute bacon for the sausage.

BREAKFAST-IN-A-MUFFIN

1/3 pound bulk sausage

3 eggs

1/8 teaspoon seasoned salt

1/8 teaspoon pepper

1 – pkg (8 oz) corn bread muffin mix

3/4 cup shredded cheddar cheese, divided

Preheat oven to 400 degrees.  In a skillet, cook sausage until no longer pink, breaking into pieces.  Remove to paper towels and drain.  Whisk eggs with seasoned salt and pepper in a small bowl.  Pour into same pan, cook and stir over medium heat until eggs are thick and no liquid remains.  Remove from heat.

Prepare muffin mix according to directions in a large bowl.  Fold in sausage, scrambled eggs and 1/2 cup cheese.  Fill paper lined muffin cups 2/3 full.  Bake 10 minutes.  Sprinkle with remaining cheese; bake 5 minutes longer or until a toothpick inserted comes out clean.  Cool 5 minutes before removing from pan to a wire rack.  Serve warm.
