PINEAPPLE MACAROONS

It’s been decades since I made these cookies, but they are a good way to use up cornflakes and crushed pineapple.

PINEAPPLE MACAROONS

1 – 8 oz can crushed pineapple

1 teaspoon baking soda

3/4 cup butter

1/4 c sugar

2 cups corn flakes

1-1/2 cups flour

1/4 teaspoon salt

3/4 cup brown sugar

1 teaspoon vanilla

Drain pineapple, reserving syrup.  Sift flour, soda and salt together.  Cream butter and sugar.  Add flour mixture, vanilla and 2 tablespoons pineapple syrup/juice.  Add corn flakes and stir in.  Shape into 1-1/4 inch balls.  Place on a greased cookie sheet about 2 inches apart.  Make indentation with thumb and fill with pineapple.  Bake 20 minutes at 350 degrees F.  Makes 30.
