I like to add just a hint of white wine vinegar, use white pepper instead of black, and a little bit of juice from canned jalapenos. It doesn’t make it overly spicy, just adds a little something that will make your guests say, “What did you do differently? This is really good!” And of course, I never tell them.

White pepper is the great undiscovered spice in the U.S. I use it all the time and bring it back from Ireland because it’s so much cheaper and easier to find there.

I like all kinds, but white pepper is great for guacamole because it blends in so well.
